Eat This: Lose Weight – No Cook Summer Tomato and Smoked Salmon Stacks
The heat is on. The stove is off. Here is a fabulous, light, Our Lady of Weight Loss approved no-cook meal that you can cool down to!
Tomato, Smoked Salmon, Baby Spinach Stacks
Ingredients:
1 teaspoon Dijon Mustard
1 tablespoon White Wine Vinegar
1 tablespoon Extra Virgin Olive Oil
4 cups of Baby Spinach leaves
1/2 cup thinly sliced Red Onions
4 medium sized tomatoes (stems removed), each cut crosswise into three slices
8 ounces smoked salmon.
Instructions:
In a medium bowl, whisk together mustard and vinegar. Gradually whisk in olive oil. Gently add baby spinach leaves and thinly sliced onion. Toss to coat all.
Arrange tomato bottoms – side by side – on a plate. Top each with a small portion of the smoked salmon, and a bit of the spinach mixture. Place tomato middles on top of the bottoms (you following me?) – place more salmon followed by spinach. Top the middle with the top of the tomato! And there it is, a STACK!
