Eat This – Totally Satisfying! Caramelized Onion Tart
A friend unexpectedly rolled into town just in time to lunch with us. It was kind of funny, because lunch was a “happening,” which is seldom the case.
Generally speaking, it’s every man-for-himself, catch-as-catch-can, you-are-on-your-own-buddy. For whatever reason, the mood had hit earlier in the day, and I had a 5 star lunch already to rock n’ roll.
A Caramelized Onion Tart was just coming out of the oven, the salad was tossed and a pitcher homemade sun tea had just been placed on the table. And get this, I had on a gorgeous apron that I’d picked up (on sale) from my favorite store, anthropologie. If I didn’t look like a cross between Donna Reed, Betty Crocker and Betsey Johnson (to dance on DWTS–you can expect a cartwheel or two), then I don’t know who did!
When my friend asked if we always dined like this, I replied with a twinkle in my eye and a hint of sarcasm in my tone, “Of course! Don’t you?”
Caramelized Onion Tart
Ingredients:
2 large sweet onions, sliced
1 tablespoon olive oil
1 teaspoon unsalted margarine
8-10 whole cloves of garlic, peeled
1/8 teaspoon pepper
4 egg whites, lightly beaten
1/3 cup low-fat sour cream
2 tablespoons Parmesan cheese, grated
1/2 teaspoon freshly grated nutmeg
Pie crust shell
Directions:
Preheat oven to 425 degrees F.
Pre-bake crust for about 10 minutes; remove from oven and cool.
Meanwhile, heat oil and margarine in a large skillet over medium-high heat; sauté onions until they begin to turn golden.
Then toss in whole garlic cloves and continue to saute.
Reduce heat to medium-low and cook 30 minutes more or until caramelized. (The more patient and caramelized you are, the better.)
Let cool slightly.
Add pepper, egg whites and sour cream to onions. Mix well.
Pour into prepared pie shell.
Sprinkle Parmesan and nutmeg evenly over the top.
Bake for 35–40 minutes or until filling is set; let stand for 5 minutes before removing from oven.
Cut into 6 wedges and serve.
Approximately: 250 calories per slice (Non-scientific analysis – I added up all ingredients and divided.)
